Vegan Big Mac

I’m so encouraged by the quality of Beyond Meat and Impossible Burgers, and I really love that I can buy Beyond Meat products right in my normal grocery store! They taste just like regular burgers, it’s truly unbelievable 😲, and the best part is that you can enjoy them without harmful effects on the environment, animals, and your body. 
For long-time vegans and vegetarians, this development in meatless options might not matter so much (i.e. I don’t often crave the taste of meat or wish I could eat a “real” burger), but for new or transitioning vegans and vegetarians, this will likely be an amazing breakthrough giving them one more reason why it’s #easy2bvegan. For that reason, I am inspired to find ways to veganize classic non-vegan foods to prove that going meatless doesn’t mean you have to sacrifice!

Here is a super easy Big Mac taste-alike recipe that’s totally vegan and so good.

Everyone knows that the best part of the Big Mac is the special sauce, and you’re not going to believe how simple it is to make. It’s so easy and made with all household ingredients — you could’ve been enjoying this favorite fast food classic at home all these years! (pssst, for a fraction of the calories and sodium too). Enjoy this guilt free fast food classic. Not #depriving but #thriving!!

Ingredients
2 Beyond Meat burgers (or plain veggie burgers of your choice)
2 sesame seed buns
1/2 cup shredded iceberg lettuce
1/4 cup minced white onion
2 slices vegan cheese (I used Chao)
4 bread and butter pickle chips

Special Sauce:
3 Tbsp vegan mayonnaise (I used Veganaise)
1 Tbsp sweet relish
2 tsp Dijon mustard (or yellow mustard)
1 tsp white vinegar
1 tsp onion powder
1 tsp garlic powder
1 1/2 tsp paprika

Instructions
In a small bowl, mix together the ingredients for the special sauce and set aside. Heat a large skillet over medium high heat. Add burgers to pre-heated pan and cook for 3 minutes on each side. Place a cheese slice on each burger, turn off heat, and cover the pan for 1 minute to allow the cheese to melt a bit. To assemble the burgers: on the bottom bun, spread a thin layer of the special sauce, then add a layer of lettuce. Flip the burger over onto the lettuce, placing the cheese slice side down. Top the burger with 2 pickle chips and a sprinkling of white onion. Spread the top bun with special sauce and place the bun on top of the burger. Serve with fries or sweet potato fries if desired!
