Balsamic Watermelon & Blackberry Salad

Summer is the time of bounty!! The time of freshness! The time of health!

This salad uses some of the best plants the earth has to offer: watermelon, blackberries, and fresh mint. I highly suggest you make this when blackberries at their peak so they are perfectly sweet + tart and firm. There’s nothing better!

The fresh, cool mint balances the sweetness and tartness of the fruits, and the drizzle of balsamic add a touch of acidity that takes this from just a dessert to a possible dinner side dish. Make this on a summer night for a healthy treat that everyone will love.

Ingredients
2 cups cubed watermelon
1 cup blackberries
2 Tbsp chopped mint
1 1/2 Tbsp balsamic vinegar

Instructions
In a serving bowl, mix together watermelon, blackberries, and mint. Drizzle lightly with balsamic vinegar and garnish with a sprig of mint. Serve immediately or let sit for 30 minutes to marinate.

Serves 2 generously
