Baking Christmas cookies is such a lovely tradition for so many people. It’s as if it’s not really Christmas if you don’t bake a batch of cookies for someone you love, or at least for the big guy in the red suit! Whether it’s a cookie exchange, a potluck office party, a hostess gift, or just a treat for you and your loved ones, there are so many reasons to bake cookies during the holiday season!
These cookies are full of all the good stuff: coconut, walnuts, chocolate chips, oats, cinnamon. They’re so much more than your average oatmeal cookie and basically foolproof to make. I am a person who likes a lot of chunk in their cookie and lots of different delicious flavors in each bite, so these cookies are my absolute favorite. I think they might become a yearly tradition in our household – a must-have cookie!!
Ingredients
1 cup brown sugar
1/2 coconut oil, melted
1 1/2 cups oats
1 cup flour
1/2 cup coconut flakes
1 tsp baking soda
1 tsp cinnamon
3 Tbsp maple syrup
1 tsp vanilla extract
2 Tbsp almond milk
1/4 cup vegan chocolate chips
1/4 cup chopped walnuts
Instructions
Preheat oven to 350 degrees. In a large mixing bowl, add brown sugar and coconut oil and mix, making sure the brown sugar has no clumps. Add oats, flour, coconut flakes, baking soda, and cinnamon, and stir in completely. The batter will be very dry and crumbly at this point. Add the maple syrup, vanilla extract, and almond milk and incorporate until it resembles a wet cookie batter. Then, fold in the walnuts and the chocolate chips. Chill the batter for 10-15 minutes. Meanwhile, prep a cookie sheet with parchment paper. Roll the batter into balls about the size of golf balls and place on the prepared cookie sheet about 2 inches apart (they spread quite a bit). Bake for 15 minutes or until the edges are golden brown. Let cool on the tray for 3-5 minutes and transfer to a cooling rack.
Makes about 18 cookies
