Chocolate Chip Banana Bread

2 cups flour
1/4 sugar
1/4 brown sugar
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1 Tbsp maple syrup
3/4 cup non-dairy milk
2 very ripe bananas (or frozen + thawed), mashed
1 1/2 tsp vanilla
2/3 cup vegan chocolate chips
coconut oil or vegan butter to grease pan

Preheat oven to 350 degrees. Grease a loaf pan and set aside. In a large mixing bowl, add flour, sugar, brown sugar, baking soda, baking powder, and cinnamon and mix well. In a separate bowl, whisk together mashed bananas, maple syrup, non-dairy milk, and vanilla. Add the wet ingredients to dry ingredients and mix gently until incorporated (don’t over mix, mix by hand). If it’s too dry, add another splash of non-dairy milk. Fold in the chocolate chips and pour in the loaf pan. Bake for 50-60 minutes or until a toothpick comes out clean. Let cool 10 minutes and serve. After one day, keeps best in the refrigerator.
