Easy Asparagus Tart

Don’t you love when something looks really difficult but it is actually super easy? I like it even more when it gives the impression of being fancy and sophisticated. This is one such thing. It’s perfect for entertaining because it’s easy and quick, impressive-looking, and absolutely delicious. With fresh asparagus in the spring time, this would be totally divine.

And I would be remiss if I didn’t mention how amazing Trader Joe’s is (have I done that before? 😏😂), and particularly their vegan garlic spread dip. Don’t walk, run to TJ’s and pick up this gorgeous spread. It’s amazing with crackers, on sandwiches, with pita and olives, and on this tart! Yum-o!

Ingredients
1 roll puff pastry (Pepperidge farm brand is vegan)
1 bunch fresh asparagus
1/2 cup Trader Joe’s Garlic Spread Dip (vegan!)
juice and zest of 1/2 lemon
olive oil, s&p
lemon slices for garnish

Instructions
Thaw puff pastry overnight in the refrigerator. Preheat oven to 400 degrees. Steam asparagus for about 3-4 minutes – not too long, you want it to still have some bite. Meanwhile, roll out the puff pastry and place on a baking sheet. Score the puff pastry about 1 inch from the outside, creating a 1 inch border. Using a fork, poke holes repeatedly throughout the inside rectangle of the pastry, leaving the border untouched. Bake for 10 minutes or until just barely turning golden. Remove from oven and spread garlic dip into the middle of the pastry. Place asparagus on top and drizzle with lemon juice, zest, and olive oil. Bake for 10-15 more minutes or until the edges are browned and the asparagus looks roasted. Garnish with lemon slices.

Serves 2-4
