It is surprisingly hard to think of creative work snacks. I bring a couple of snacks every day for when I get hungry in the afternoon, and it’s hard not to get tired of carrots and hummus, and apples and peanut butter. Don’t get me wrong, these combinations and others similar to them are basically my lifeline, so I would never dis them. I just mean that sometimes I am in the mood for something new, surprising, filling, crunchy, creamy, and all natural (unprocessed).
Enter the date ball. These babies are like a vegan snacking dream. Made with just a few ingredients, and with endless possibilities of combinations and flavors, they are really worth trying out and tinkering with what types of date balls work best for your palette and cravings. These are from Fit Foodie Finds and have just dates, peanut butter, almonds, and cocoa powder. Lee from Fit Foodie Finds processed her almonds and dates a bit more than I did, but I prefer the crunchy texture. These balls pictured here are actually frozen as well, because I prefer my date balls cold! They keep for a few weeks and it is so handy to just take one out when you need an after dinner snack that won’t do much damage.
1 cup raw almonds
1 Tbsp cocoa powder
2 Tbsp peanut butter
Process almonds until they are finely ground. Set aside. Process dates until they become a paste. Add almonds back in along with peanut butter and cocoa powder, and process until well combined. Form into balls, and either eat immediately, store in an air-tight container for 3-4 days, or freeze for up to 2-3 weeks. Makes 12 balls.
