Lentil Bolognese with Zoodles

I don’t have a spiralizer and I don’t mind because my grocery store almost always has pre-spiraled veggies available to buy for a reasonable price. It saves me time, mess, and physical effort and means I can spend more time and energy on the sauce! Although with this lentil bolognese sauce, it hardly takes any time OR energy to whip it up. So I guess this is just my lazy meal.

But as far as lazy meals go, this one is a pretty healthy and inexpensive one. It’s low-carb, high-protein, low calorie, hearty, and filling. It’s also a healthy dinner disguised as spaghetti with meat sauce, so if you’re feeding picky kids, this is an easy way to get some green into their little bodies!

I wanted to eat this so badly that I didn’t even wipe the bowl before the blog pics!! Man, this really is my lazy meal!

Ingredients
1 cup dry green lentils
2 cups water
1 Tbsp olive oil
1 clove garlic, minced
1/2 jar tomato sauce
1 tsp Italian seasoning
1/2 tsp garlic powder
1/4 tsp salt
1 package store-bought zucchini noodles (“zoodles)

Instructions
Bring 2 cups of water to a boil in a small saucepan and add lentils. Cover and reduce heat to a gentle simmer for 15-18 minutes, or until all of the water is absorbed. In a large, deep skillet over medium high heat, add olive oil and garlic and let cook for 1-2 minutes. Add cooked lentils, tomato sauce, Italian seasoning, garlic powder, and salt. Bring to a simmer and let flavors blend for 4-5 minutes. Add zucchini noodles (“zoodles”) and stir to incorporate. Serve once zoodles are warmed through.
