I had a craving for vegetable cream cheese, so I figured out how to make vegan vegetable cream cheese! It was quick and easy, and cost a lot less than if I went to buy vegan vegetable cream cheese at the natural foods market.
What’s better on a Sunday morning than toasted everything bagels and vegetable cream cheese, especially if it’s dairy free and cruelty free? You could make this recipe with lots of different flavors: chive and onion, scallion, old bay, or whatever you fancy!
Now that I know I can make this vegan cream cheese in no time, I’ll be making it all the time! For guests, or whenever we want something special and different.
1 package firm tofu, drained and pressed
2 Tbsp lemon juice
2 Tbsp apple cider vinegar
1 tsp onion power
1 tsp garlic power
1 tsp sea salt
1 Tbsp finely chopped chives
1 Tbsp finely chopped carrots
1 Tbsp finely chopped bell pepper
Everything bagels for serving, if desired
Place tofu, lemon juice, apple cider vinegar, onion powder, garlic powder, and sea salt in a food processor and blend until smooth. Refrigerate for 30 minutes. Fold in chopped chives, carrots, and bell peppers, and season with more salt to taste. Serve on toasted bagels. Keep refrigerated.
