Mash Up Dinner

Today was a hot day full of outdoor activities and not enough water. I came home after hours of being in the hot sun and felt sunburned and dehydrated. And famished!

I was craving an easy dinner full of vegetables to help quench my thirst and replenish my body of the energy and nutrients I had sweat out during the day.

This meal is a mash-up of the different things I was craving – roasted sweet potatoes, steamed broccoli, caramelized onions, and black beans. I left the beans room temperature and just lightly steamed the broccoli to provide a nice mixture of textures, temperatures, and flavors.

Ingredients
2 small sweet potatoes (or 1 large)
olive oil
salt and pepper
2 small yellow onions, sliced thinly
1/2 can black beans, drained and rinsed
1 bag frozen broccoli

Instructions
Preheat oven to 350 degrees. Peel and chop sweet potatoes, place on cookie sheet, and toss with olive oil, salt and pepper. Place in oven for 25 minutes (tossing halfway through). Meanwhile, steam broccoli for 10 minutes or until heated through, and saute onions in olive oil until golden brown and soft. Plate sweet potatoes and broccoli (garnish broccoli with olive oil and salt), and top dish with black beans and caramelized onions. Mix together for a delicious, healthy, and easy meal.
