Beet Risotto

Eat the rainbow!
It’s sound advice if you’re trying to eat a healthier diet, because vegetables with big color usually have big nutritional value too. The vibrant colors are mother nature’s way of making healthy fruit and vegetables more appealing to animals. It’s no wonder why I’m drawn to bright berries and juicy red tomatoes – it’s all down to nature! Eating lots of different veggies is virtually a guaranteed way to get a variety of vitamins and minerals in your food supply. Tonight, of the rainbow, we ate:

Purple (beets)
Orange (carrots)
Green (spinach)
Yellow (dash of turmeric)

The purple from the beets ended up turning the risotto a beautiful magenta color during the cooking process. I feel like I couldn’t have dreamed up a more beautiful pinkish-purple if I tried. And it’s a good thing I loved the color, because my kitchen was virtually covered in it by the time dinner was ready! But the arborio rice absorbed more than just the color – the beets and carrots also brought a satisfying sweetness to the risotto, making this meal a whole different experience than eating a typical salty, parmesan-y risotto. It was surprising, fun, healthy, easy, and colorful! Give it a try.

1 cup arborio rice
4 cups veggie stock
olive oil
1/2 yellow onion
2 cloves garlic
1 can beets
handful of baby carrots
handful of baby spinach
salt, pepper
dash of turmeric for a surprise flavor and color (optional)

Heat up veggie stock on medium low heat until at a gentle simmer. Chop beets, carrots, onion, and garlic into very small pieces. Add olive oil to a skillet on medium heat, saute onion, carrot, and garlic until just starting to soften. Add in the beets and the arborio rice and stir until the rice because mostly translucent. Add veggie stock to the skillet one cup at a time, stirring constantly, adding more stock once you can see the bottom of the skillet. It is finished when the rice is creamy (not al dente). Fold in spinach until wilted and, if desired, top with a sprinkle of turmeric for a nice surprise of color and flavor. Enjoy!
